In Basilicata c’è una produzione ittica e una cultura gastronomica legata al pesce sia di mare che di acqua dolce ed è numerosa la bibliografia anche di testi antichi che riportano ricette con riferimento a prodotti ittici lucani. La volontà di creare questa pubblicazione è nata dal bisogno della formazione ed informazione degli addetti al settore (pescatori, trasformatori, distributori, ristoratori) ma anche dei consumatori.
Basilicata does have its own fish production and a food culture linked to both sea and freshwater fish, and that there are also a large number of ancient texts containing recipes and names of Lucanian fish products. The desire to create this publication arose from that very need of training and information for employees in the sector (fishermen, food processors, distributors, restaurateurs) as well as consumers.
