The high symbolic value assigned to olive oil throughout millennia is the result of cultural mediation. Had such mediation not existed, olive oil would have become an extremely ordinary fat, undoubtedly the healthiest and the most pleasant one, but a mere fatty substance and nothing more. Without art, as well as literature, olive oil would not have had the drive making it so popular today and so widely celebrated by legends and religions in the past.
